Delighted to announce, Max Natmessnig and Marco Prins will commence their roles as Co-Executive Chefs at the Chef's Table at Brooklyn Fare at the beginning of October 2023.
Having collaborated for a cumulative six years at Brooklyn Fare and previously at Oud Sluis in the Netherlands, Marco and Max eagerly anticipate embarking on this next chapter.
They look forward to working in tandem, ushering in a new era of fine dining at this esteemed institution.

Alois defines itself as a modern fine dining establishment, offering a menu of light and contemporary product-based cuisine within an informal atmosphere. Guests can indulge in a relaxed dining experience amidst an ambiance that seamlessly blends tranquility and sophistication. The exquisite selection of wines, expertly recommended by Julien Morlat, is sourced from the restaurant's well-stocked cellar boasting over 800 choices. Morlat's adept stylistic choices consistently deliver delightful surprises, enhancing the unique experience of dining at Alois.
Under the leadership of Max Natmessnig, the restaurant regained its prestigious status, securing two Michelin stars once again after a brief hiatus.

Max Natmessnig, having spent five years crafting culinary excellence at the distinguished Arlberg restaurant, earned the highest honor bestowed upon a chef in Austria: Gault & Millau Chef of the Year. The restaurant itself garnered acclaim with four toques and an impressive 18.5 points from Gault & Millau.
Until today the chef’s table is one of the best culinary hotspots in the Alps.

Chefs Table at Brooklyn Fare was founded in downtown Brooklyn in 2009, as a space for cooking classes and an 18-seat dinner-service. It has since moved and grown into its home in Hell’s Kitchen on West 37th Street.
The dining establishment garnered widespread acclaim, securing the 55th spot on The World's 50 Best Restaurants' expanded list. In 2011, The New York Times restaurant critic Sam Sifton bestowed a noteworthy three out of four stars upon it.
Notably, Jean-Luc Naret, former director of the Michelin Guide, and his spouse experienced the restaurant firsthand, expressing astonishment at what they encountered. Naret deemed it among the finest dining establishments in New York and included it in his list of the 300 greatest worldwide. The restaurant achieved its coveted third Michelin star in 2011, maintaining this prestigious rating until a change in leadership occurred in 2023.
Following the transition to a new executive chef team under Max Natmessnig & Marco Prins, the restaurant, unfortunately, relinquished all three stars.

Established in 2012, The NoMad restaurant, boasting a prestigious Michelin star, is renowned for its seasonal European-American cuisine. One of its standout offerings is a signature dish - an entire roasted chicken for two, artfully filled with foie gras and truffles. Notably, James Kent, who currently operates the restaurants Crown Shy (one Michelin Star) and Saga (two Michelin Stars), held the position of executive chef from 2013 to 2017.
Daniel Humm and Will Guidara, previously managing the nearby Eleven Madison Park under owner Danny Meyer, seized the opportunity to independently open The NoMad. This initiative led Meyer to divest Eleven Madison Park, as the proximity of the two restaurants would create a competitive scenario.
The restaurant and hotel closed permanently in March 2021 due to the COVID-19 pandemic.

Oud Sluis, located in Sluis, Netherlands, was once a distinguished restaurant that garnered Michelin stars consecutively since 1995. During the years 1995–1998, it held one Michelin star, followed by two stars from 1999 to 2005, and finally achieving three stars in 2006.
Spearheaded by the renowned chef Sergio Herman, Oud Sluis gained recognition, earning a spot on The S.Pellegrino World's 50 Best Restaurants list in 2003. It debuted at the 40th position and climbed to the 17th spot in the 2011 ranking.
However, in June 2013, Sergio Herman declared the impending closure of Oud Sluis by the year's end. This decision aimed to redirect his focus toward other ventures and, importantly, to allocate more time to his wife and four children. The restaurant ultimately bid farewell on December 22, 2013, marking the end of an era.

Steirereck consistently graces the upper echelons of The World’s 50 Best Restaurants list—a testament not only to the chef's visionary prowess but also to the exceptional and ever-evolving hospitality overseen by the matriarch of the dining room, Birgit Reitbauer.

Since 1993, L'auberge de l'île has been Michelin-starred and has garnered recognition from Gault et Millau. In 2007, Jean-Christophe Ansanay-Alex was lauded for his noteworthy contribution to Lyon's esteemed reputation in both France and internationally during the 5th edition of the Griffe Lyonnaise, a significant event in Lyon's creative sphere. Finally, in 2016, the restaurant secured a coveted spot in the OAD Top 100, a distinguished ranking of the world's finest establishments in the classic and heritage categories.
